Pasta salad with sweet pepper medley

    This vibrant vegetarian pasta salad with peppers is fun and versatile. Full of flavour and great as a side dish to an array of menus. Great hot or cold!

    Serves: 6 

    • 500g fusilli pasta
    • 6 tablespoons olive oil
    • 2 teaspoons red wine vinegar
    • salt and pepper, to taste
    • 2 red peppers, seeded and roughly chopped
    • 2 green peppers, seeded and roughly chopped
    • 2 yellow peppers, seeded and roughly chopped
    • 1/2 red onion, finely chopped
    • 2 tablespoons chopped fresh flat leaf parsley
    • juice of 1/2 lemon
    • 225g sliced black olives

    1. Bring a large saucepan of salted water to the boil and add the pasta. Cook until al dente or according to the instructions on packet. Drain and cool.
    2. In a bowl, mix together the olive oil, vinegar and seasoning and pour over the pasta. Toss well to coat. Add the chopped peppers, onion, parsley, lemon juice and olives; toss well to mix. Chill in the fridge for 1 hour before serving.
