About this recipe: This slow cooker onion purée is a fantastic base for so many dishes. Use in quiches, pies, risotto or even on pizza. Great to make ahead and freezes well.


Makes: 1 jar onion puree

  • 450g thinly sliced onion
  • 1 clove garlic, minced
  • 250g salted butter
  • 450ml water
  • salt and pepper, to taste

  1. Preheat the slow cooker to auto or low setting.
  2. Combine all of the ingredients in the slow cooker.
  3. Cook on auto or low setting for 4 to 5 hours or until the onion has completely softened. The purée is ready when the onions have softened and there is just some liquid remaining. Purée using a hand held liquidiser then use or store.
