About this recipe:Bubble and squeak is a firm favourite any times there are lots of vegetable leftovers, especially as Christmas.
6 to 7 teaspoons olive oil
1 onion, sliced
2 cloves garlic, minced
8 cooked potatoes
1/2 cooked swede
250g cooked Brussels sprouts
1 head cooked cabbage
1 bunch chopped fresh chevril
salt and pepper, to taste

Preheat the oven to 180 C / Gas 4.
In an ovenproof skillet over a medium heat, heat the oil then add the onion and garlic. Cook and stir for 4 to 5 minutes until the onion is soft but not brown.
In a bowl, mash together all of the leftover vegetables. Season well. Mix in the onion and garlic. Return the mixture back to the hot skillet and fry for 6 to 8 minutes, moving the vegetable mixture around adding more oil if necessary to stop any sticking. Pat the cake down in the pan.
Bake in the preheated oven for 10 to 15 minutes until a golden crispy skin develops over the bubble and squeak. Flip the cake half way through cooking then return to the oven to brown some more. Remove from the oven and serve.
This recipe presumes that you are using cooked vegetable leftovers. You can make if from scratch, just steam the vegetables first and mash together.
