A vegetarian version of coronation chicken made with cauliflower florets. Creamy, tasty and great with some greens.

450g (1 lb) cooked cauliflower florets
2 sticks celery, thinly sliced
110g (4 oz) raisins or sultanas
110g (4 oz) roasted and salted whole cashew nuts
225g (8 oz) mayonnaise
1 heaped tablespoon curry powder
1 clove garlic, minced
1 teaspoon lemon juice
salt and pepper, to taste
sprig of fresh basil, to garnish

In a large mixing bowl, combine the cauliflower, celery, raisins and cashew nuts.
In a separate bowl, mix together the mayonnaise and the curry powder, adding a little curry powder at a time and taste testing as you go along. When desired taste is achieved, add the minced garlic and lemon juice. Mix well.
Add the curried mayonnaise mixture to the cauliflower mixture and mix well, making sure that the cauliflower florets are well coated. Season to taste. Garnish with a sprig of fresh basil.
