Slow cooker corn chowder

    This tasty slow cooker corn chowder soup is great for a midweek supper when you have little time. Start this chowder off before work and come home to a delightful meal.

    Serves: 4 

    • 3 tablespoons salted butter
    • 110g streaky bacon, chopped
    • 1 medium onion, finely chopped
    • 1 clove garlic, minced
    • 3 large potatoes, peeled and diced
    • 600ml vegetable stock
    • 2 (200g) tins sweetcorn, drained
    • 25g cornflour
    • 2 tablespoons cold water
    • 300ml full fat milk
    • 2 tablespoons chopped fresh parsley
    • salt and pepper, to taste

    1. Preheat the slow cooker to auto or low.
    2. In a frying pan, melt the butter and add the bacon. Cook and stir until brown then add the onion and garlic and cook and stir for 4 minutes until soft. Transfer to the slow cooker. Combine the remainder of the ingredients in the slow cooker, mixing the cornflour and cold water together prior to adding to the cooker.
    3. Cook on auto or low for 6 to 8 hours.


    The variety of potatoes used for the chowder may have an effect on the amount of liquid in the slow cooker after 6 to 8 hours. Top up with vegetable stock if the cooker begins to get a little dry. If there is too much liquid turn the cooker to high and thicken with a little extra cornflour.

    Simple, but delicious! I added a couple of carrots (sliced). Also, I added almost another cup of water and 1/2 cup of milk because I wanted a thinner soup.  -  12 Dec 2016


    I think this is delicious As I went to chop the potatoes I noticed they were going bad so I made the chowder without them and added roasties from the freezer once it was done.  -  11 Oct 2014
