About this recipe: Persimmons make a deliciously different crumble! The flavour of persimmons reminds me of honey, so I added a little honey to the crumble. Use the firm persimmons for this recipe, not the ones that need weeks to ripen.

Serves: 6 

  • 2 tablespoons honey
  • 1 tablespoon brown soft sugar
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cornflour (optional)
  • 750g persimmons (sharon fruit), peeled and thinly sliced
  • Crumble topping
  • 150g self raising flour
  • 100g butter
  • 50g caster sugar

  1. Preheat an oven to 190 C / Gas 5. Grease a baking dish.
  2. Combine honey, brown sugar, cinnamon and cornflour. Toss the sliced persimmons in the honey mixture. Place in the dish and cover with foil.
  3. Bake for 30 minutes, till persimmons are tender. Remove from oven and remove foil. Increase oven temperature to 250 C / Gas 9.
  4. Combine self raising flour, butter and caster sugar in a bowl, and rub together until the mix is like breadcrumbs. Spread mixture evenly over the persimmons.
  5. Return to the oven and bake for about 15 minutes, till the crumble topping is golden. Serve warm!
