This lovely mulled cider recipe is great for using up any excess apple juice left over from the autumn apple harvest, or indeed for finishing off any cider batches that aren't really working out too well. Perfect as a Christmas party drink.

10 whole cloves
6 allspice berries
3cm piece root ginger
3 star anise
1/2 teaspoon ground nutmeg
4 cinnamon sticks
2L apple juice or scrumpy
spiced rum, optional
orange slices, for serving

Create a spice bag using muslin and string and add the cloves, allspice berries, ginger and star anise. Secure tightly with kitchen string.
In a large saucepan combine the apple juice or scrumpy with the spice bag, cinnamon sticks, nutmeg and rum if using. Simmer over a low heat for 1 hour. Remove the cinnamon sticks and spice bag.
Strain the mulled cider if desired then pour into serving glasses and garnish with orange slices.
