Preheat the slow cooker to auto or low setting.
Create a spice bag using muslin and string containing the cloves, allspice berries, ginger and star anise. Secure tightly with kitchen string.
In the slow cooker combine the apple juice or scrumpy with the spice bag, cinnamon sticks, nutmeg and orange zest and juice. Add the gammon joint.
Slow cook for 8 hours on auto or low. Carefully remove the ham from the slow cooker, remove the skin and smear the fat with the marmalade. Place under a hot grill for 5 to 6 minutes until the marmalade bubbles and browns slightly. Serve.
