About this recipe: These delicious almond biscuits are fairly easy to make and ever so tasty. Great as an addition to afternoon tea.


Serves: 8 

  • 170g self raising flour
  • 85g golden caster sugar
  • 55g ground almonds
  • 140g butter
  • 1 teaspoon almond extract
  • 1 pinch salt
  • 55g flaked almonds
  • 1 egg white

  1. Preheat the oven 180 C / Gas 4. Grease a baking tray.
  2. Combine all of the ingredients, except the flaked almonds and egg white, in a food processor and blend until a soft dough forms. Turn the dough out onto a floured surface and roll out to 1cm thickness. Using a fluted cutter, cut out the biscuits. Arrange on the prepared baking tray. Brush with the egg white and sprinkle with flaked almonds.
  3. Bake in the preheated oven for 10 to 15 minutes until golden brown. Remove from the oven and allow to cool before serving.
