Lime drizzle cake

    This lovely lime drizzle cake is moist, full of flavour and a great addition to afternoon tea. Just slice and enjoy with a cuppa.

    Serves: 8 

    • For the cake
    • 35g butter
    • 125g golden caster sugar
    • 2 eggs
    • 60g mascarpone cheese
    • 135g plain flour
    • 1 teaspoon baking powder
    • zest of 2 unwaxed limes
    • For the lime drizzle
    • juice of 2 limes
    • 85g caster sugar

      For the cake:

    1. Preheat the oven to 180 C / Gas 4. Grease and line a 450g loaf tin.
    2. In a mixing bowl, cream together the butter and sugar and beat in the eggs one at a time until well blended. Beat in the mascarpone cheese then fold in the flour, baking powder and lime zest. Pour the mixture into the prepared cake tin.
    3. Bake in the preheated oven for 40 minutes until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin.
    4. For the lime drizzle:

    5. In a saucepan over a medium heat combine the lime juice and sugar and stir until the sugar dissolves.
    6. Prick the cake all over with a skewer then pour the drizzle over the cake. Once the drizzle has formed a crust, remove the cake from the tin and slice and serve.

    I had a couple of limes I wanted to use up from Christmas drinks, so very glad I found this recipe. In the light of the previous review I doubled the amount of butter as 35g seems so little for 135g of flour. Also I had no marscapone so put in two tbsp Greek yogurt instead. The cake was to die for - superb taste and texture.  -  04 Jan 2018


    I made this exactly per recipe and it came out quite dense. Really good taste but could definitely have been improved had it been lighter textured. Possibly my poor baking skills though! It was still al eaten up.  -  03 Apr 2016
