About this recipe:This lovely lime drizzle cake is moist, full of flavour and a great addition to afternoon tea. Just slice and enjoy with a cuppa.
For the cake
125g golden caster sugar
60g mascarpone cheese
135g plain flour
1 teaspoon baking powder
zest of 2 unwaxed limes

juice of 2 limes
85g caster sugar

For the cake:
Preheat the oven to 180 C / Gas 4. Grease and line a 450g loaf tin.
In a mixing bowl, cream together the butter and sugar and beat in the eggs one at a time until well blended. Beat in the mascarpone cheese then fold in the flour, baking powder and lime zest. Pour the mixture into the prepared cake tin.
Bake in the preheated oven for 40 minutes until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin.
For the lime drizzle:
In a saucepan over a medium heat combine the lime juice and sugar and stir until the sugar dissolves.
Prick the cake all over with a skewer then pour the drizzle over the cake. Once the drizzle has formed a crust, remove the cake from the tin and slice and serve.
I made this exactly per recipe and it came out quite dense. Really good taste but could definitely have been improved had it been lighter textured. Possibly my poor baking skills though! It was still al eaten up. - 03 Apr 2016
