This delicious orange honey blossom cake is pure indulgence and very sweet. You have been warned! Enjoy with some vanilla ice cream.

For the cake
55g muscovado sugar
220g orange blossom honey
250g self raising flour
1 teaspoon ground ginger
1 pinch ground nutmeg
zest of 1 orange
3 eggs, beaten
For the glaze
4 tablespoons orange blossom honey
2 teaspoons icing sugar

For the cake:
Preheat the oven to 180 C / Gas 4. Grease and line a 20cm cake tin.
In a saucepan over a medium heat, combine the butter, sugar and honey. Stir until the sugar is dissolved. Sift the flour into a bowl and add the spices and zest. Gradually add the eggs followed by the honey mixture. Mix well then pour into the prepared cake tin.
Bake in the preheated oven for 50 to 55 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool.
For the glaze:
Mix the honey and icing sugar together in a bowl. Spread over the top of the cake. Slice and serve.
