This mustard and balsamic sauce is great for meat dishes such as steak or pork. Add fresh herbs for some extra flavours.

200ml red wine
1 shallot, finely sliced
2 tablespoons balsamic vinegar
1 teaspoon wholegrain mustard
1 sprig fresh thyme, chopped
1 sprig fresh rosemary, chopped

Begin by making a red wine reduction. In a saucepan over a medium heat, add the wine and bring to a simmer and cook until reduced by half. Add the shallots, vinegar, mustard and herbs and cook gently for 10 minutes.
