Carrot and sultana salad

    This delicious carrot and sultana salad is refreshing and fruity. We enjoy it with barbecue chicken and a baked potato.

    Serves: 4 

    • 450g carrots, peeled and grated
    • 225g sultanas
    • 4 tablespoons olive oil
    • 2 tablespoons red wine vinegar
    • zest and juice of 1 lemon
    • salt and pepper, to taste

    1. Combine the carrots and sultanas together in a bowl and toss. Whisk together the remaining ingredients and pour over the carrot and sultanas. Serve chilled.
