Smoked salmon roulades

    These charming smoked salmon roulades are a lovely way to begin an elegant dinner party or special meal.

    Serves: 6 

    • 250g shelled prawns
    • 350ml creme fraiche
    • 2 tablespoons lemon juice
    • 1 tablespoon horseradish
    • 1/2 teaspoon paprika
    • salt and pepper, to taste
    • 1 tablespoon chopped fresh parsley
    • 1 tablespoon chopped fresh chives
    • 1 tablespoon chopped fresh chervil
    • 12 slices smoked salmon

    1. In a food processor combine all ingredients except the smoked salmon. Divide the filling between the 12 slices of salmon, placing he filling at the edge of each slice then rolling up into a roulade. Slice in half. Divide between 6 guests and serve chilled.
