250g smoked salmon
1 (480g) tin pink salmon
225g cream cheese
juice of 1/2 lemon
150g mascarpone cheese
chopped fresh parsley, to taste
salt and pepper, to taste

Set aside 4 slices of smoked salmon. Combine the remainder of the smoked salmon, tinned salmon, cream cheese and lemon juice. Blend until smooth. Fold in the mascarpone cheese, parsley and seasoning. Divide the mixture between the 4 slices of reserved salmon then roll up into parcels. Serve folded side down.
