This lovely slow cooked one pot lamb shanks dish is nourishing and full of lovely flavours. Serve with some potatoes or seasonal vegetables.

2 tablespoons butter
1 large onion, finely chopped
2 leeks, chopped
4 lamb shanks
3 carrots, sliced
2 large potatoes, peeled and chopped
700ml vegetable stock
4 tablespoons pearl barley
1 bouquet garni
salt and pepper, to taste
chopped fresh parsley, to taste

In a saucepan over a medium heat, melt the butter and add the onion and leeks. Cook and stir for 5 minutes until soft. Add the lamb shanks and brown on all sides. Add the vegetables and stock and stir to mix. Add the barley, bouquet garni and seasoning. Cover and simmer gently for 3 hours until the lamb is tender. Remove from the heat and serve hot with fresh parsley to garnish.
