This delightful blue cheese soufflé can be made with your favourite blue cheese for a delightful twist on a traditional Cheddar cheese soufflé.

2 tablespoons plain flour
300ml full fat milk
4 eggs, separated
110g blue cheese, grated
salt and pepper, to taste
1/2 teaspoon chopped fresh thyme
1 pinch ground nutmeg

Preheat the oven to 200 C / Gas 6. Grease a 15cm soufflé dish.
In a saucepan over a medium heat, melt the butter and add the flour. Whisk in the milk gradually until the sauce thickens. Remove from the heat and whisk in the egg yolks. Stir in the cheese until melted. Season well and add the thyme and nutmeg.
In a separate bowl, whisk the egg whites till stiff peaks form. Fold into the cheese sauce. Pour into the prepared soufflé dish.
Bake in the preheated oven for 20 to 30 minutes until risen and golden brown. Remove from the oven and serve immediately.
