About this recipe: This pork meatloaf is a lovely alternative to a meatloaf made with beef mince. Serve hot with mashed potato and seasonal vegetables or cold in sandwiches.


Serves: 6 

  • 450g minced pork belly
  • 200g smoked streaky bacon, finely chopped
  • 1/2 onion, minced
  • 2 eggs, lightly beaten
  • 225g breadcrumbs
  • 2 small apples - peeled, cored and minced
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh parsley

  1. Preheat the oven to 180 C / Gas 4. Grease a 700g loaf tin.
  2. In a large mixing bowl, combine all of the ingredients and mix well with hands. Transfer to the prepared loaf tin and smooth the top.
  3. Bake in the preheated oven for 90 minutes until the pork is no longer pink in the centre. Remove from the oven and slice and serve.
