About this recipe: This Italian fish stew is rich in flavour and vibrant in colour. Serve with a crisp cool salad on the side.


Serves: 4 

  • 6 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bay leaf
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil
  • 1 teaspoon Nandos® Peri-Peri sauce
  • 1 (400g) tin chopped tomatoes
  • 300ml white wine
  • 800g mixed white fish, roughly diced

  1. Heat the olive oil in a large casserole dish and add the onion and garlic. Cook and stir for 5 minutes until soft then add the remaining ingredients. Cover and simmer very gently for 45 minutes until the fish is an even colour throughout. Remove from the heat and serve hot.
