    About this recipe: A big, hearty, packed with flavour bowl of soup is hard to beat. This is one which brings comfort with every spoonful.

    Serves: 4 

    • 2 tablespoons extra virgin olive oil
    • 150g (5 oz) smoked streaky bacon, chopped
    • 2 large carrots, chopped
    • 1 onion, chopped
    • 75g (2 1/2 oz) turnip or swede, chopped
    • 2 sticks celery, chopped
    • 4 fresh large tomatoes, peeled and chopped
    • 3 large leeks, chopped
    • 55g (2 oz) cabbage, shredded
    • ½ Red Pepper - chopped
    • 1.2L (2 pt) ham stock
    • salt and freshly ground black peeper

    1. Heat oil in a large pan, add the bacon and cook gently, stirring occasionally, for some 3 to 4 minutes until slightly browned but not crisp.
    2. Add onion, carrot, swede, red pepper and celery and cook gently, stirring occasionally, for some 2 minutes until slightly softened.
    3. Add tomatoes, leeks and cabbage and continue to cook gently, again stirring occasionally, a further 8 minute or so.
    4. Add stock, season, cover and bring to boil. Simmer gently, covered, for some 20 minutes or so or until vegetables are tender.
    5. Remove from heat, taste for seasoning and serve as is or "blitz" with blender and serve.
