    About this recipe: These mushrooms are beautifully versatile. They can hold their own as a starter, served simply with crusty bread or can pair well with meat or fish.

    Ingredients
    Serves: 4 

    • olive oil, as needed
    • 3 shallots, diced
    • 4 cloves garlic, crushed
    • 450g (1 lb) fresh wild mushrooms, be adventurous - try oysters, chanterelles, etc.
    • 1 large handful parsley, coarsely chopped
    • salt to taste

    Method
    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Heat up a sauté pan on a medium heat, with a generous drizzle of olive oil. Add the shallot, and cook until soft. Add the garlic and mushrooms.
    2. Sauté until everything is cooked. Add the parsley to finish, and season to taste. Enjoy!
