About this recipe: Very cheap and nourishing, this slow cooker onion soup is thickened with oats for a simple winter warmer.

Serves: 4 

  • 250g onions, roughly chopped
  • 500ml stock or water
  • 50g porridge oats
  • salt and black pepper to taste
  • 60ml milk or soya milk
  • chopped fresh parsley or chives, to garnish

  1. In saucepan bring onions, stock or water to the boil, then put into pre-heated slow cooker. Add oats and seasoning. Cook on low for 6 to 8 hours.
  2. Blend with hand blender till smooth. Turn slow cooker to high or transfer to saucepan, add milk and reheat. Adjust seasoning and serve garnished with chopped fresh parsley or chives.
