About this recipe: This one pot sausage and baked bean stew is ever so easy to make and perfect for a midweek winter supper. Full of delicious flavours, best served over mashed potato.


Serves: 4 

  • 2 tablespoons olive oil
  • 450g pork sausages
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 small red chilli, seeded and minced
  • 1 tablespoon tomato puree
  • 2 potatoes, peeled and diced finely
  • 450ml vegetable stock
  • 200ml barbecue sauce
  • 2 (415g) tins baked beans

  1. In a casserole dish, heat the oil and fry the sausages until browned on all sides. Remove from the pan and slice. In the same casserole dish, add the onion, garlic, chilli and tomato purée. Cook and stir for 4 minutes until soft. Stir in the potatoes then add the stock, barbecue sauce and baked beans. Return the sausage to the pan and cover.
  2. Simmer for 45 minutes until the sausage is no longer pink in the centre and all of the ingredients have cooked down well together. Remove from the heat and serve hot.
