These quick breaded pork chops are very easy to make and yield a tasty result, great with mashed potato and vegetables.

2 eggs, lightly beaten
2 tablespoons chopped fresh thyme
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh parsley
salt and pepper, to taste
225g fine breadcrumbs
3 tablespoons butter
4 pork chops
4 tablespoons soured cream
chopped fresh chives, to garnish

In a bowl, combine the eggs, herbs and seasoning. Mix well. Lay the breadcrumbs out on a plate.
In a frying pan over a medium heat, melt the butter. Coat the pork chops in the egg mixture then coat with breadcrumbs. Transfer the chops to the frying pan and cook covered for 6 to 8 minutes on each side, until the chops are no longer pink in the centre. Serve with some soured cream and chopped fresh chives.
