Fresh cucumber salad

    This fresh cucumber salad is a great side dish for your next meal. Pairs really well with barbecue chicken or steak just adjust the chilli to taste.

    Ingredients
    Serves: 4 

    • 2 tablespoons soft brown sugar
    • 3 tablespoons hot water
    • 450g sliced cucumber
    • 3 shallots, thinly sliced
    • 1 small chilli, seeded and minced
    • salt and pepper, to taste
    • 2 to 3 tablespoons toasted sesame oil
    • 2 teaspoons vinegar

    1. Dissolve the sugar in the hot water, then combine with remaining ingredients in a bowl and toss to mix well. Chill in the fridge for 1 hour then serve.
