About this recipe: The ultimate version of a peanut butter sandwich takes some good hearty bread packed with sesame and sunflower seeds, with sweet mashed banana as a perfect partner for the peanuts. Serve with crisp apple or fresh, juicy pineapple wedges for extra fruit value.

Serves: 4 

  • 2 large ripe bananas
  • 8 tbsp crunchy peanut butter
  • 8 thick slices sunflower and sesame bread (or other good bread)
  • 85g raisins

  1. Peel the bananas and slice them into a bowl. Using a fork, lightly mash the bananas to remove most of the lumps.
  2. Spread the peanut butter evenly over 4 of the slices of bread. Spoon a quarter of the banana over each slice.
  3. Top with the raisins and cover with the remaining bread slices. Cut the sandwiches in half and serve at once.


*In place of the bananas, halve and stone 300g fresh ripe apricots. Finely chop them in a food processor, then stir in 1 tsp runny honey. Spread over the peanut butter. * Peel 1 ripe mango and cut the flesh away from the stone. Using a fork, mash the mango until almost smooth. Spread over the peanut butter in place of the bananas. *For a savoury variation, blend 100g reduced-fat soft cheese with 1 tsp Marmite, then spread over the top of the peanut butter.

This was so simple but so tasty. I made it for the kids I childmind and they really enjoyed it as a lunchtime snack. It seemed to fill them up for quite a while and they really loved the raisins-a great way to get in their five a day. - 21 Apr 2009
