Chocolate chip date loaf

    This lovely chocolate chip date loaf is moist and flavourful. Great served with some coffee in the morning or indeed for afternoon tea.

    Serves: 8 

    • 120g butter
    • 140g soft brown sugar
    • 1 egg, beaten
    • 1 teaspoon vanilla extract
    • 60ml milk
    • 225g chopped dates
    • 225g chocolate chips
    • 190g self raising flour

    1. Preheat the oven to 170 C / Gas 3. Grease a 900g loaf tin and line with baking parchment.
    2. Cream the butter and sugar together until light and fluffy. Add the egg and vanilla extract. Beat in the milk and then add the dates and chocolate chips. Sift in the flour and fold to combine. Spoon into the prepared loaf tin and smooth the top.
    3. Bake in the preheated oven for 50 to 60 minutes until a skewer inserted into the centre of the cake comes out clean. Remove from the oven and allow to cool fully before slicing and serving.

    Very easy recipe though it did seem very wet after adding the egg (large) and milk. All worked out though and the slices were inhaled by work colleagues!  -  27 May 2014
