Preheat the oven to 180 C / Gas 4. Grease a 900g loaf tin and line with baking parchment.
Cream the butter and brown sugar together until light and fluffy. Mix in the eggs and vanilla extract. Beat in the milk and then add the apricots and walnuts. Sift in the flour and add the baking powder and cinnamon and fold well to combine. Spoon into the prepared loaf tin and smooth the top.
Bake in the preheated oven for 50 to 60 minutes or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool for 1 hour before slicing and serving.
