    Persimmon, also known as Sharon fruit, is charming in this light and refreshing fool which perfectly shows off the delicate flavours of the persimmon.

    Ingredients
    Serves: 4 

    • 250g Greek yoghurt
    • 180ml extra thick double cream
    • juice of 1/2 orange
    • juice of 1/2 lime
    • 3 tablespoons icing sugar, sifted
    • 270g persimmon, peeled and chopped

    1. In a bowl, whisk together the yoghurt, cream, juices and icing sugar until light and creamy. Stir in the persimmon. Chill in the fridge for at least 1 hour then serve.
