This tasty chicken and courgette bake is a great way to use up an excess of courgette and any leftover chicken. Delicious as a mid week supper.

2 tablespoons butter
1 clove garlic, minced
2 courgettes, chopped
3 spring onions, chopped
450g cooked chicken, chopped
200g cooked macaroni pasta
1 (295g) tin cream of chicken soup
200ml double cream
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
salt and pepper, to taste

Preheat the oven to 180 C / Gas 4.
In an ovenproof casserole dish over a medium heat, melt the butter and add the garlic, courgettes and spring onions. Cook and stir for 5 minutes until softened slightly. Add the remainder of the ingredients and stir to mix well.
Bake in the preheated oven for 30 minutes until piping hot and golden brown. Remove from the oven and serve.
