About this recipe:This lovely flavourful sausage and sweet potato bake is a tasty way to use up an excess of sweet potatoes.
4 large sweet potatoes, peeled and roughly diced
2 tablespoons butter
1 clove garlic, minced
2 large green peppers, seeded and roughly chopped
3 sping onions, chopped
450g sausage meat
2 tablespoons Nandos® Peri-Peri sauce
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
salt and pepper, to taste

Preheat the oven to 180 C / Gas 4.
Bring a saucepan of water to the boil then add the sweet potatoes. Cook for 10 minutes until softened but still firm in shape. Arrange in an ovenproof casserole dish.
Meanwhile melt the butter and add the garlic, peppers and spring onions. Cook and stir for 5 minutes until softened slightly. Add the sausage meat and cook until no longer pink. Add the remainder of the ingredients then sprinkle amongst the sweet potatoes.
Bake in the preheated oven for 30 minutes until piping hot and golden brown. Remove from the oven and serve.
Constantly looking for new and interesting ways of using up sweet potatoes. This was scrumdidlyumptious!!! Even my daughter who won't touch sweet potatoes eat it, saying, 'but I don't like sweet potatoes'! Left out the raisins though as don't like fruit in savoury dishes. - 29 Apr 2014
