About this recipe: These lovely pear and apple slices are fruity and flavourful and perfect for using up an excess of apples and pears in the autumn months.


Serves: 6 

  • 110g butter
  • 140g brown sugar
  • 2 eggs
  • 250g self raising flour
  • 1 teaspoon baking powder
  • 2 small apples - peeled, cored and thinly sliced
  • 2 small pears - peeled, cored and thinly sliced
  • 55g raisins
  • 100ml apple juice

  1. Preheat the oven to 180 C / Gas 4. Grease a 20cm cake tin and line with baking parchment.
  2. In a mixing bowl, cream together the butter and the sugar until light and fluffy. Beat in the eggs one at a time then sift in the flour and baking powder. Add the apples, pears, raisins and apple juice and mix well. Pour into the prepared cake tin.
  3. Bake in the preheated oven for 45 minutes until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool. Slice and serve.
