Preheat the oven to 180 C / Gas 4. Grease a baking tray or line with baking parchment.
In a saucepan over a medium heat, melt the butter and add the sugar and golden syrup. Stir until the sugar is dissolved. Remove from the heat and set aside.
Meanwhile, sift the flour into a bowl and add the salt, ginger and nutmeg. Add the butter syrup and knead into a dough. Turn out onto a floured board and roll to a 5mm thickness. Using a gingerbread cutter, cut to desired sizes then arrange on the prepared baking tray.
Bake in the preheated oven for 15 to 20 minutes until golden brown. Remove from the oven and allow to cool on a rack for 1 hour before decorating and serving.
