Baked clementines

    Clementines are infused with cinnamon, fresh vanilla and star anise, then baked in the oven, which smells wonderful. To eat, just remove the spices. Serve on their own, or with vanilla ice cream.

    • 6 clementines
    • 1 whole vanilla pod
    • 2 cinnamon sticks
    • 6 star anise
    • 1/2 teaspoon icing sugar
    • ice cream and/or caramel sauce to serve (optional)

    1. Bring a large pot of water to the boil. Blanch the unpeeled clementines in the boiling water for 1 minute. Scoop them out with a slotted spoon and dry them off.
    2. With a sharp knife, make 3 slits on top of each clementine to allow you to insert spices.
