These crispy potato cakes are a tasty side dish and great with some scrambled eggs and smoked salmon or even with some baked beans and a couple of sausages.

4 large potatoes, peeled and finely grated
1 white onion, finely grated
2 eggs, lightly beaten
2 tablespoons butter
salt and pepper, to taste
2 tablespoons olive oil
2 spring onions, chopped

Combine all of the ingredients, except the oil, in a bowl and mix well. Form into potato cakes.
Warm the oil in a frying pan over a medium heat then place the potato cakes in the pan. Fry for 8 to 10 minutes on each side until golden brown. Remove from the pan and blot with kitchen paper if necessary before serving.
