Crispy golden potato cakes

    These crispy potato cakes are a tasty side dish and great with some scrambled eggs and smoked salmon or even with some baked beans and a couple of sausages.

    Serves: 6 

    • 4 large potatoes, peeled and finely grated
    • 1 white onion, finely grated
    • 2 eggs, lightly beaten
    • 2 tablespoons butter
    • salt and pepper, to taste
    • 2 tablespoons olive oil
    • 2 spring onions, chopped

    1. Combine all of the ingredients, except the oil, in a bowl and mix well. Form into potato cakes.
    2. Warm the oil in a frying pan over a medium heat then place the potato cakes in the pan. Fry for 8 to 10 minutes on each side until golden brown. Remove from the pan and blot with kitchen paper if necessary before serving.

    Excelllent crispy results. I use a trick rec by fellow AR Allstar Baking Nana. Rinse shredded potatoes in clear cold water in a salad spinner and spin out the water. Keeps the potatoes from getting to starchy.  -  24 Jan 2017
