Makes: 6 garlic mushroom tarts
500g puff pastry
3 tablespoons butter
3 cloves garlic, minced
2 small shallots, finely chopped
750g mixed wild mushrooms, sliced
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh chives
salt and pepper, to taste

Preheat the oven to 180 C / Gas 4. Grease a baking tray. On a floured surface roll out the pastry and cut out 6 circles with a 12cm diameter. Arrange the pastry discs on the prepared baking tray.
In a frying pan over a medium heat, melt the butter then add the garlic and shallots, cook and stir for 3 minutes until starting to soften. Add the mushrooms and stir to coat in the garlic butter. Add the herbs, season and cook for 5 minutes. Spoon the garlic mushrooms onto the prepared pastry discs.
Bake in the preheated oven for 15 minutes until golden brown. Remove from the oven and serve immediately.
