Roasted garlic and red pepper dip

    This gorgeously flavourful and creamy roasted garlic and red pepper dip is just fantastic for parties and casual gatherings.

    Serves: 6 

    • 4 large red peppers, seeded and diced
    • 4 tablespoons olive oil
    • 3 cloves garlic, minced
    • 300g cream cheese
    • juice of 1 lemon
    • 4 tablespoons black olives, stoned
    • salt and pepper, to taste

    1. Preheat the oven to 220 C / Gas 7.
    2. In a bowl, toss the peppers in the olive oil and minced garlic. Spread out on a baking tray.
    3. Bake in the preheated oven for 15 minutes or until tender. Remove from the oven.
    4. In a food processor, combine the garlic peppers, cream cheese, lemon, olives and seasoning. Blend until smooth then transfer to a serving bowl. Chill in the fridge for 1 hour prior to serving.
