Makes: 25 spiced bisuits
110g brown sugar
1 egg, lightly beaten
2 teaspoons mixed spice
1/2 teaspoon ground ginger
250g plain flour

Preheat the oven to 180 C / Gas 4. Grease a baking tray.
In a mixing bowl, cream together the butter and the sugar until light and fluffy. Add the egg and beat well to mix. Add the spices and sift in the flour. Form into a dough and turn out onto a lightly floured surface. Roll out to 1cm thick and cut out using a fluted biscuit cutter. Arrange on the prepared baking tray.
Bake in the preheated oven for 15 to 20 minutes until golden and firm. Remove from the oven and allow to cool fully on a cooling rack prior to serving.
