Pan fried pollock with a red onion mash

About this recipe: This lovely pan fried pollock over a red onion mash is filling and full of lovely flavours. Lovely for a special meal for two.


Serves: 2 

  • 3 red potatoes, diced
  • 1 clove garlic, minced
  • 4 tablespoons butter
  • 1 tablespoon wholegrain mustard
  • 55ml double cream
  • 1 tablespoon chopped fresh parsley
  • salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 red onion, chopped
  • 2 pollock fillets, with skin on

  1. Bring a large saucepan of water to the boil and add the potato and garlic. Cook for 20 minutes until tender. Drain and mash together with the butter, mustard, cream, parsley and seasoning.
  2. In a frying pan over a medium heat, warm the olive oil and add the onion. Cook and stir for 4 minutes until soft. Remove from the frying pan and add to the mashed potato.
  3. In the same pan, add the fish and increase the heat to high. Cook with the skin side down for 6 to 8 minutes, covered. Turn the fillets over and cook to brown the top of the fillet for 2 to 3 minutes. Return to cooking skin side down until the fish is an even white colour throughout, taking care not to overcook.
  4. Spoon the mash on to warm serving plates then place the fish on top. Serve immediately.

Absolutely loved this recipe! It was quick to prepare, cheap and really tasty. I will definitely be making it again. NB Unless you use 3 massive potatoes, more may be necessary. I also cut down the butter to 3 tbs! Thanks to AToft for posting it - 06 Jul 2015
