Courgette feta fritters

    I made these courgette fritters for my baby, but they are great for grown ups, too, especially dipped in Thai sweet chilli sauce. A great way to get veggies into little ones!

    Makes: 2 dozen fritters, depending on size

    • 2 courgettes, grated
    • zest of 1 lemon
    • 75g feta cheese, crumbled
    • 1 handful grated Parmesan cheese
    • chilli flakes, to taste
    • 1 pinch dried oregano
    • 15g bunch fresh mint, finely chopped
    • salt and pepper to taste
    • 85g plain flour
    • 1 egg
    • 150ml milk
    • oil, for frying

    1. Mix the courgette, lemon zest, cheeses, chilli flakes, herbs, salt and pepper in a bowl.
    2. Make the batter: in another bowl mix the egg and flour together. Add in the milk, whisking as you go.
    3. Combine the courgette mix and batter mix.
    4. Heat a frying pan with oil over medium high heat. Spoon heaps of the batter into the hot pan.
    5. Fry until golden both sides.
    6. Leave to drain on paper towel before serving.


    You could use mozzarella in stead
