Any fruit muffins

    This recipe makes 5 to 6 muffins, and can use any fruit, other than watery fruits like pineapple or grapefruit. Apples will be fine, so will any berries.

    Makes: 5 to 6 muffins

    • 150g self raising flour
    • 80g caster sugar
    • 40g butter
    • 100ml milk
    • 1 teaspoon lemon juice
    • 1 free range egg, beaten
    • 100g fruit, chopped if necessary

    1. Preheat oven to 200 C / Gas 6. Line muffin tin with 5 or 6 muffin cases.
    2. Put butter, sugar and flour into a medium mixing bowl and rub with hands until small flakes.
    3. Pour milk and lemon juice into a small bowl and gently mix together. Now mix in the egg.
    4. Combine the wet and dry mixtures and fold together till just combined. Fold in the fruit. Divide mixture between prepared cases.
    5. Bake for 15 to 20 minutes, or till muffins test done when a skewer or knife inserted in the centre comes out clean.

    This is a quick and easy recipe to follow. I have used it several times for various different fruit muffins and have even made a banana and walnut loaf/cake which worked very well and tasted even better. Well done to the muffinman!  -  20 Feb 2014
