Festive cheese shots

    Imagine serving a shot glass full of curd cheese which has been delicately flavoured with cinnamon, finished with a spoon of redcurrant jelly and a crispy bacon stick. Its festive cheer in a glass with its subtle warmth and aroma of Christmas with a savoury edge of the salty bacon.

    Serves: 6 

    • 200g curd cheese
    • ground cinnamon
    • 1 (200 to 300g) jar redcurrant jelly
    • 1 (50g) packet ready cooked crispy bacon
    • 6 shot glasses (plastic or glass)

    1. Start by placing the curd cheese in a mixing bowl. Add 1 teaspoon cinnamon, stir and taste. Repeat this process tasting in-between to ensure that there is a cinnamon flavour without it overpowering the cheese.
    2. Spoon 1 teaspoon redcurrant jelly into each shot glass.
    3. Add 1 to 2 teaspoons of the curd cinnamon mixture into the glasses. (If you have any mixture leftover you could top up the glasses)
    4. Grab a sieve and dust the top of the glasses with some cinnamon for presentation.
    5. Break/cut the bacon into long pieces about 3 to 4cm (Tip: It will be brittle so be as careful as you can) then place into the mixture like a straw.
