Scottish tablet

This is a great sweet we have here in Scotland. It is a complete sugar rush. It may be too sweet for some people but I love it. Try it anyway and see what you think. Kids will love it!

Ingredients

  • Knob of butter
  • 450g (1lb) caster sugar
  • 120ml (4 fl oz) milk
  • 1 small tin (397g) sweetened condensed milk
  • 1/2 teaspoon vanilla extract

Preparation method

  1.   Grease a square baking tin (with tall sides) with butter.
  2.   Heat sugar and milk slowly in a heavy based saucepan till all the sugar dissolves.
  3.   Add the condensed milk and bring to the boil.
  4.   Boil for about 15-20 minutes until it becomes pitted like a moon base.
  5.   Then boil for another 5 minutes until it comes off the sides of the pan easily.
  6.   Pour into the greased tin.
  7.   Leave to cool for ten minutes, mark into squares of desired size and cut when completly cool.

    I find that the best way to know when it is ready is to invest in a sugar thermometer. Keep boiling it until it reaches the 'soft ball' mark on the thermometer, then it will be ready to pour into your greased tin. It helps to ensure a perfect batch each time. I would also recommend adding 2 tsp of vanilla as the taste can get lost in the sweetness of the sugar.

    Review: Socks

    Like so many recipes, it can take seconds to learn but years to master. The tablet myself and my brother cooked was somewhat overdone and tasted a little burnt. Nevertheless it was tasty enough to get eaten up on the same day we made it. And we will keep trying until we get it just right!
