Lime and Coriander Chicken

    • Zest and juice of 1 lime
    • 2 tsp dried mint
    • Fresh chopped coriander
    • Big pot natural yoghurt
    • 1 tsp salt
    • 1 clove garlic, crushed
    • 4-6 chicken breasts cut into chunks


    1. Tip the yoghurt into a bowl.
    2. Add the lime zest and juice, mint, coriander and salt and garlic.
    3. Stir the mixture and coat the chicken.
    4. Leave overnight to marinate (optional but recommended for full flavour)
    5. Grill or barbecue the chicken on skewers and serve in a pitta bread with salad
