2 rashers streaky bacon, chopped
2 king scallops
2 slices bread
mayonnaise, to taste
1/2 avodaco, sliced
salt and pepper, to taste

In a frying pan over medium heat, warm the oil and cook the bacon until crispy. Remove from the pan and blot with kitchen paper. Increase the heat and cook the scallops for 2 to 3 minutes on each side, until just opaque in the centre. Remove from the pan and slice half horizontally.
Lightly toast the bread and spread the mayonnaise over. Add the scallops, bacon and avocado then season. Serve warm.
