Scallop, bacon and avocado sandwich

    This super tasty scallop, bacon and avocado sandwich can be dressed up or down as a posh open face sandwich or a hearty baguette; whatever you choose, the flavours will delight you.

    Serves: 1 

    • 1 tablespoon olive oil
    • 2 rashers streaky bacon, chopped
    • 2 king scallops
    • 2 slices bread
    • mayonnaise, to taste
    • 1/2 avodaco, sliced
    • salt and pepper, to taste

    1. In a frying pan over medium heat, warm the oil and cook the bacon until crispy. Remove from the pan and blot with kitchen paper. Increase the heat and cook the scallops for 2 to 3 minutes on each side, until just opaque in the centre. Remove from the pan and slice half horizontally.
    2. Lightly toast the bread and spread the mayonnaise over. Add the scallops, bacon and avocado then season. Serve warm.
