225g dried apricots
2 tablespoons butter
4 gammon steaks, chopped
4 potatoes, peeled and chopped
300ml chicken stock
2 carrots, sliced
1 tablespoon cornflour
2 tablespoons cold water
1 packet puff pastry

Soak the apricots in water overnight.
The next day drain the apricots, discard the water and cut the apricots into thirds.
In a large casserole dish, melt the butter and add the gammon. Cook and stir over a medium heat for 4 minutes until just browned. Add the potatoes, apricots, stock and carrots and cook for 20 minutes. Mix the cornflour into the cold water then add to the casserole dish, stir until the sauce has thickened.
Preheat the oven to 180 C / Gas 4. Transfer the filling to a pie dish. On a floured surface, roll out the pastry pie lid. Press the pastry down at the edges of the dish to seal.
Bake in the preheated oven for 20 to 30 minutes until the pastry is risen and golden brown. Remove from the oven and serve.
OMG!! Made this and it was AMAZING!! Made it using half the mixture and shortcrust pastry (as I didn't have any puff pastry), so it took about 10 more minutes to cook. Was definitely worth it. Smelt fantastic while it was cooking and tasted just as good. Fed 2 of us easily, would have stretched to 3. Will definitely be making this again, went down well ☺ - 01 Feb 2016
