A favourite from yesteryear, this cheese and ale toast is perfect for warming the cockles on a cold evening.

300g thickly sliced Cheddar cheese
4 to 5 tablespoons wholegrain mustard
4 to 5 tablespoons butter
6 extra thick slices bread
salt and pepper, to taste

Preheat the oven to 180 C / Gas 4. Grease a baking tray and arrange the cheese in the base of the dish. Smear over the mustard and butter then pour over just enough ale to cover the cheese. Cover with foil.
Bake in the preheated oven for 6 to 8 minutes. Remove from the oven and stir well. Meanwhile, toast the bread on both sides and place on serving plates. Spoon the cheese and ale mixture over each slice and season. Serve immediately.
