Low carb meatloaf

    It's easy to cut out the carbs with this low carb meatloaf recipe. Great as a midweek supper, serve with seasonal low carb vegetables or a nice big salad.

    Serves: 8 

    • 675g beef mince
    • 1 onion, finely chopped
    • 2 cloves garlic, minced
    • 3 tablespoons Worcestershire sauce
    • 1 tablespoon Cholula® hot sauce
    • chopped fresh parsley, to taste
    • chopped fresh chives, to taste
    • 2 tablespoons chopped spring onion
    • 2 red peppers, seeded and finely chopped
    • 1 yellow pepper, seeded and finely chopped
    • salt and pepper, to taste
    • 1 egg, lightly beaten
    • 4 tablespoons olive oil
    • 3 tablespoons low carb tomato ketchup
    • 1 bay leaf

    1. Preheat the oven to 180 C / Gas 4.
    2. Combine all of the ingredients in a large mixing bowl, except the bay leaf, and mix well with hands until the mixture begins to take on the consistency of burger patties. Transfer to the prepared loaf tin and pat down, gently pressing into the sides of the tin. Spread the ketchup on the top of the meatloaf then lay the bay leaf on top and press a little into the mixture.
    3. Bake covered with tin foil in the preheated oven for 60 to 80 minutes until the beef is no longer pink. Remove the foil for the last 15 minutes of cooking. Remove from the oven, slice and serve.

    Very tasty meatloaf will be making it again. Left the oil out just to cut the fat content out.  -  21 Nov 2016
