Pan fried salmon fillet

    Nothing is quicker and easier than pan frying a salmon fillet! Great when you need something nutritious in a hurry for dinner.

    Ingredients
    Serves: 2 

    • 2 tablespoons butter
    • 2 salmon fillets, skin on
    • 2 tablespoons olive oil
    • salt and pepper, to taste

    1. In a frying pan over a medium to high heat, melt the butter. Rub the fillets in olive oil and season generously.
    2. Place the fillets in the frying pan, skin side down and cover. Cook for 6 to 8 minutes. Check on the salmon, it should be about halfway cooked at this stage. To brown the top of the fillet, flip over and cook on the top for 3 to 4 minutes. Flip back onto the skin and cook until the fish is an even pink colour throughout yet still moist and juicy. Remove from the pan and serve immediately.

    Tip

    If you are new to cooking fish, try to find fillets that are quite even in thickness as this will help you to not overcook the fish. You can also select fillets that are from the tail or belly of the fish giving a higher fat content as this will help keep the fish moist even if it does get slightly overcooked.
